Ingredients:

  • 1 cup cooked quinoa
  • 1 cup chopped kale
  • 1 cup sliced shiitake mushrooms
  • 1/2 cup cooked black beans
  • 1/4 cup chopped red onion
  • 2 tablespoons Chi Chaga Mushroom Powder
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional toppings: avocado, cherry tomatoes, sprouts, or a fried egg

Instructions:

  1. Add the chaga mushroom powder to a pot of water and bring it to a simmer.
  2. Let it simmer for about 20 minutes to an hour, depending on how strong you want the flavor to be.
  3. Strain the liquid through a fine mesh strainer or cheesecloth to remove any remaining powder.
  4. Cook the quinoa according to package instructions, using the infused chaga liquid instead of water.
  5. In a pan over medium heat, add the olive oil, chopped kale, and sliced shiitake mushrooms. Cook for about 5 minutes or until the kale is wilted and the mushrooms are soft.
  6. Add the cooked black beans, chopped red onion, garlic powder, salt, and pepper. Cook for another 2 minutes.
  7. Divide the cooked quinoa into two bowls and top each with the mushroom and kale mixture.
